A new high-end steakhouse is currently under development in Lusaka, Zambia, with doors set to open in August/September 2025. The restaurant will focus on premium steaks, complemented by a carefully curated lunch and dinner menu, sushi offerings, and seasonal blackboard specials. A skilled and driven Head Chef is needed to take full leadership of the kitchen, from initial setup through to post-launch operations. This hands-on role includes full kitchen establishment, menu creation, team recruitment, supplier management, and day-to-day oversight. Reporting directly to the ownership team, the successful candidate will play a key role in shaping the restaurant’s culinary direction, operational structure, and guest experience
Minimum Requirements:
3–5+ years’ experience as Head Chef in a steakhouse, grill room, or upmarket restaurant
Recognised culinary diploma or professional certification
Advanced skills in butchery, grilling, and sauce work
Proven track record in setting up new kitchens or launching restaurant operations
Experience in managing kitchen teams, training staff, and implementing SOPs
Strong background in stock control, menu costing, supplier management, and budgeting
Excellent communication and leadership abilities
Valid passport and willingness to relocate
Duties and Responsibilities:
Oversee all aspects of the kitchen setup: layout input, equipment recommendations, supplier selection, and workflow systems
Develop and cost a full menu, with a strong focus on premium steaks, sushi, and seasonal chef specials
Recruit, train, and lead a new kitchen brigade; manage schedules, performance, and training
Maintain the highest standards of food quality, hygiene, and consistency across all service times
Implement kitchen controls and procedures for efficiency, compliance, and cost management
Collaborate with ownership to ensure alignment on brand vision, service standards, and menu direction
Engage with guests as needed to support brand positioning and enhance the dining experience
Monitor customer feedback and adjust offerings to match market preferences
Contribute to long-term planning and support potential future site expansions
